Jill's Favorite Cheesecake

This week on 19 Kids and Counting, Jill Dillard made no bake cheesecake for her mother-in-law, Cathy. The recipe she used is a Duggar family favorite and is simple to make. The Duggars call it Allie's No Bake Cheesecake.

Ingredients
2 package cream cheese (12 oz. total)
1 c. powdered sugar
8 oz. Cool Whip™

Directions
Beat cream cheese and powdered sugar together, and fold in Cool Whip™. The mixture will fill 24 cupcakes with a vanilla wafer in the bottom, 1 heaping gram cracker crust, or 2 thin gram cracker crusts.

  3. This sounds delicious!

A healthy version is to whip 2 cups of whipping cream with a bit of sugar and vanilla, beating it until thick but not butter. This takes all of five minutes and leaves out all of the chemicals in Cool Whip.

  12. I make this with 3 pkgs of cream cheese, 3/4 c powdered sugar and blend, then I make my own whip cream w/heavy cream, vanilla & 2TBS sugar to yield about 1 1/2 cups when done, and fold into cream cheese mixture. Takes more like real cheesecake, less like cheesecake FLUFF. Then add fresh fruit or fruit topping, and refrigerate for 3 hours.

  14. Looks really easy to make but is it 12 oz total or two 12 oz packages. Our cream cheese comes in 8 oz blocks. 12 oz would be one and a half packages of cream cheese.

  17. Lily and Ellie,
Do you know if the strawberries were mixed with a glaze? It didn't look like just fresh strawberries, perhaps she made her own glaze. Thanks.

  19. A great addition is a 16 or 20 ounce can of crushed pineapple (drained) added to the filling ingredients. For the pie crust, I prefer vanilla wafer pie crusts.
