Peachy Salmon, Potato Mashups, and More!

Our readers have been asking for the recipes that Heather, founder of Mom Made Foods, prepared with Anna Duggar on "Duggar Girls Go Glam," one of this week's new episodes of 19 Kids and Counting. Here they are!

Peachy Salmon
family mealPrep Time: Max. 10 minutes
Cook Time: 10-15 minutes
Serves 4-6

Ingredients:
  • 2 lbs of fresh salmon
  • Four fresh peaches
  • 1 Tbsp rice vinegar
  • 2 Tbsp honey
  • 1 Tbsp olive oil
  • Dash of sea salt
HeatherwithfamilyDirections:
  • Pre-heat oven to 350  ̊F.
  • Peel and slice peaches, place in a baking dish around the salmon.
  • In a separate bowl, combine rice vinegar, honey, olive oil and salt, and top salmon and peaches with sauce.
  • Bake for 10-15 minutes (until the fish flakes when poked with a fork).

Ingredients:
  • Fresh yellow squash, 2-3, large
  • Fresh string beans, 2 handfuls
  • 1 Tbsp olive oil
  • Dash of sea salt
  • Garlic clove, pressed or diced

  • Wash and chop the squash and green beans.
  • Add olive oil to sauce pan over medium heat. Add fresh garlic and cook for 1 minute.
  • Add squash and green beans and cook for 5-8 minutes until beans are bright green and squash is tender.
  • Add salt and pepper to taste.

Potato Mashups

Ingredients:
fingerling
  • Fingerling potatoes
  • Olive Oil
  • Dash of sea salt
  • Ground pepper
  • Garlic, pressed or diced
Directions:
  • Boil potatoes for 15 minutes.
  • After potatoes are soft, place them on a baking pan and mash with a fork.
  • Sprinkle potatoes with olive oil, fresh pressed garlic, salt and pepper. Bake for 15 minutes

Rainbow Meatball Kabobs
Prep Time: Max 10 minutes
Cook Time: 2 minutes

Ingredients:
Optional dipping sauces:
  • Ketchup
  • Barbeque
  • Honey mustard
  • Teriyaki
Directions:
  • Prep dipping sauces and serving platter.
  • Cut cheddar and veggies into bite-size cubes
  • 10 minutes before you are ready to serve, heat meatballs for 60 sec. in the microwave.
  • Place pieces on a toothpick or skewer to make your own kebabs.

  2. I have to say that those are not all that healthy. White potatoes are high carb, low energy foods. Processed foods contain lots of sodium and preservatives. If you want to eat healthier, go to the meat and fresh whole foods sections. Stay away from processed!!

    1. LOL! All of these recipes are healthy. There are other ones not as healthy, but these, ??? I'm not sure what is processed in the above 3 recipes, except for the optional dipping sauces for meatballs--sheesh!

    2. I used Sweet Potato with the recipe Potato Mashup instead of the normal white potatoes. Work well. Very tasty nice.whe whole family wanted seconds lol

    3. We need an update on the family since they are not longer on t.v. I am sure all of their families have grown with new marriages and babies. The heading is too small too see them all and then names of everyone. It would be wonderful if you could do like a family tree and start with jim-bob and michelle and give us and updated photo the start down the line with joshes family and then names and and updated photo, then john david and his family with their names and a photo, act in down the line!

  10. The portion size is large, but there is nothing wrong with fish, fruit, veggie and a starch being put on the plate. One half grains and protein, one half produce not counting potatoes and corn. It is fine. Just cause it's on the plate doesn't mean it will be eaten all in one go. Leftovers could be used for lunch.

  13. Next time family come expecting a big dinner and they let you know they are five hours away a day early now you know what to make them. Fish. Sauté veggies and oven roasted potatoes. The fish may be more than the turkey. But the veggies are going to be less than the casserole and the potatoes and rolls. Just veggie and garlic. No cans of anything. No flour. Three or four adults could eat a pound of salmon. Anymore is gluttony. Sox or more little kids could get through a pound of salmon realistically. Especially with potatoes and veggies. Or add rice to make it stretch but let it be no more than a quarter of the plate. Less than a quarter a serving.

  14. Do you know all the unnecessary unhealthy ingredients that in those bagged frozen meatballs? They add sugar, fats, syrups and junk. You have lost a lot of ground using those. Just purchase some ground beef and make your own, freeze them in a Ziploc freezer bag, and nuke when needed. Fresh, and you know what YOU put into them.

  15. It's not actually processed food. You need to read the recipes properly and also watch the episode carefully. Yes white potatoes are high carbs and low energy but it's fine in moderation. You have to have a balance of all areas.

  16. why does she have to pay someone to teach her how to cook. their is so many free recipes online. the duggars do not eat healthy. they do not take advanage of what they have. why don't they grow a garden or even raise chickens? they have so much land that could be used for that.

  17. They don't watch tv or spend their time online except for really safe places. I was also wondering how she would not know the secret to crushing garlic. Maybe she did but was being nice. But they probably don't watch talk shows or watch food network. Anna is renting. It's not their land to put chickens on or dig a garden from. Cherry tomatoes in a large pot would be fun for the kids. They are a smaller family and have access to fresh produce. So it's not critical for them. Also some communities don't allow them. Especially in the burbs. The other duggars do have a garden. They don't focus much on food anymore.

  18. If you actually look at the ingredient list in the meatballs you are going to be a little surprised. Two small meatballs on a stick with cheese and fruit isn't the worse thing in the world.

  20. "nuke when needed". :) Funny how everybody has their little ideas about how to eat healthy and are willing to speak their mind on it, but are totally blind in other spots regarding the same issue. Read up on the bad effects of microwaves on our food and health.

  21. I make these potatoes all of the time. I didn't see oven instructions posted. I use baby reds or yellow. (Golf ball size) Boil till fork tender. Spray sheet pan w/EVOO. Then smash potatoes with potato masher on pan. Drizzle them with olive oil, sea salt &cracked pepper. Bake at 450 or broil for 20 min. They taste AMAZING!! :)
